Sausage and peppers combined with onions and mozzarella cheese baked in pizza dough…yes please! In this delicious dish, sausage and peppers are sautéed, spread over pizza dough with some marinara sauce and a hearty helping of cheese, and then rolled up and baked. Seriously…give this a try. 🙂
1 can Pillsbury pizza crust
½ lb. sausage, casing removed
½ of a green bell pepper, cut into approximately ¼ inch by 1 inch strips
½ of a red bell pepper, cut into approximately ¼ inch by 1 inch strips
1 small onion, cut into small strips (about the same size as the peppers)
3 cloves garlic, minced
2 tbsp. finely chopped onions
1 can crushed tomatoes (28 oz.)
1 tsp. sugar
½ tsp. salt
½ tsp. crushed red pepper (optional)
2 cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
4 tbsp. extra virgin olive oil, divided
Step 1: For the marinara sauce: Heat one tablespoon of oil in a medium-size saucepan over medium heat. Add the 2 tablespoons of finely chopped onions and one clove of garlic and sauté for one minute. Stir in the crushed tomatoes, sugar, salt, and crushed red pepper. Reduce the heat to low and simmer for 30 minutes.
Step 2: Heat 1 tablespoon of oil in a skillet over medium heat. Add the sausage and break up with a spoon. Sauté until most of the pink is gone and the sausage has browned, about 4-5 minutes. Transfer the sausage to a bowl.
Step 3: In the same skillet, add another tablespoon of oil. Over medium heat, add the onions, peppers, and 2 cloves of the minced garlic. Sauté for about 5 minutes, or until the veggies have softened. Stir in salt and pepper to taste. Pour into the bowl with the sausage.
Step 4: Preheat oven to 450 degrees. Grease a baking pan and spread the pizza dough on the pan. Roll out to form a large a large rectangle. Spread ½ cup of the sauce on the pizza dough, leaving 1 inch of space empty around the perimeter. Spread the cheeses over the sauce, then top with the sausage and peppers.
Step 5: From the long side, begin rolling the dough into a long, tight cylinder. Pinch the ends to secure the filling inside the roll. Brush with the remaining tablespoon of oil and then bake for approximately 14-17 minutes, or until the crust is golden brown. Remove from the oven and let sit for about 10 minutes.
Step 6: Slice it up into 1 – 1 ½ inch pieces. Serve with the marinara sauce!
