It’s that time of year … the time when everyone is looking for meat-free dishes. Veggie tots are a great addition to your meat-free recipe collection. This recipe is simple, healthy, and delicious. Spice it up with a little sriracha ranch dipping sauce, or complement it with a nice, sweet marinara sauce. Or … just dip it in plain ’ole ketchup. Regardless, they are little bundles of veggie goodness! Give ’em a try!
Ingredients:
3 cups broccoli
1 cup baby carrots, halved
1/2 cup finely chopped onion
2 cloves garlic, minced
1 egg, lightly beaten
1/4 cup breadcrumbs
1/2 cup Panko
1/2 cup grated cheddar cheese
2 tbsp. parsley
1 tbsp. sugar
1/2 tsp salt
1/2 tsp pepper
Boil water and add salt. Add carrots and blanch for 2 minutes. Add broccoli and blanch for an additional 1 minute. Remove, drain, and rinse with cold water to stop the cooking process. Allow to cool, then place into food processor. Pulse until mixture is chopped finely. Transfer to a large bowl. Add in the additional ingredients and stir well to combine.
Using wet hands, form mixture into tot shapes (about 1 ½ tablespoons for each), place onto a greased baking sheet, and bake at 425 degrees for 17 to 22 minutes, or until tots are very lightly browned and firm. Serve with dipping sauce of choice!
