Barbecue Chicken Dip

Chicken, barbecue sauce, cheese, bacon…all in a delicious dip. So easy, and soooo good!  This is always a favorite at family events, tailgates, and game nights. It’s one of my go-to appetizers that I know everyone will love.  Serve it up with chips, and you’ve got a party!

Ingredients:

2 1/2 cups chopped up Rotisserie Chicken, skin removed (or skinless, boneless chicken breast)
1 1/4 cups barbecue sauce (I usually use Bulls Eye or Jack Daniels brand)
2 tbsp. honey
8 oz. softened cream cheese
¼ cup ranch dressing
2 cups shredded cheddar/jack cheese
Crumbled bacon
Chopped scallions

Step 1: Preheat oven to 375 degrees.  Spread cream cheese in the bottom of a 13×9 inch casserole dish.  Mix the chicken, barbecue sauce, and honey in a bowl.  Spoon evenly over the cream cheese.  Drizzle the ranch dressing evenly over the chicken, then spread the cheese on top.  Bake for 25-35 minutes.

Step 2: Allow to cool for 5 minutes, then sprinkle with the bacon and scallions.  Scoop it up with some tortilla chips and enjoy!
