Thai Peanut Chicken

I have been trying to find more uses for my slow cooker, and this recipe came up a winner!  Tender chicken nestled in a pool of delicious peanut sauce.  Just divine. The combination of peanut butter, coconut milk, and soy sauce is fantastic, and when you add spices like ginger, garlic, and jalapeno, it’s just an explosion of flavor!  Sooo good!

Ingredients:
6 boneless, skinless chicken thighs
¾ cup coconut milk
½ cup creamy peanut butter
Juice of 2 limes
¼ cup Soy sauce
1 tbsp. finely chopped jalapeno
2 tsp. ginger
3 cloves garlic
2 tbsp. brown sugar
Sesame seeds and chopped scallions for garnish

Combine all of the ingredients in the slow cooker.  Cover and cook on high for 3 – 4 hours or until chicken is cooked through and no longer pink in the center.

Remove chicken from crockpot, spoon sauce over it, and garnish the chicken with the sesame seeds and scallions.  Eat up!
