This is another one of my go-to appetizers for parties and tailgates. Sweet and spicy buffalo chicken is combined with cool, creamy blue cheese dressing and cream cheese in this fabulous dip. It is topped with cheese and baked to melted perfection, then it is sprinkled with chopped scallions to finish it off. Sooo delicious!
I like to use tortilla chips and celery sticks as dippers, but use whatever dippers you like. 🙂
Ingredients:
8 oz. cream cheese, softened
3 cups chopped rotisserie chicken, skin removed (or poached chicken)
1 cup hot sauce (I use Frank’s)
1/4 tsp. garlic powder
2 tbsp. honey
2/3 cup blue cheese dressing
2 cups shredded Monterey jack/cheddar cheese
2-3 tbsp. chopped scallions
Tortilla Chips, celery sticks
Directions:
Step 1: Preheat the oven to 350 degrees. Spread the cream cheese in a 9×13 inch casserole dish.
Step 2: In a large bowl, combine the chicken, hot sauce, and honey. Spoon the chicken mixture over the cream cheese.
Step 3: Drizzle the blue cheese dressing over the chicken. Sprinkle on the celery, then disperse the cheese over the top of the casserole.
Step 4: Bake for approximately 30 minutes or until hot and bubbly. Let cool for a few minutes, then sprinkle on the scallions. Serve with tortilla chips!
