I love anything with barbecue sauce—especially chicken strips. So I wanted to find a recipe for honey barbecue chicken strips that would be crispy but not fried. That’s where the cornflakes come in. Crushed cornflakes make the perfect crispy coating for chicken…and no need to fry it! They come out baked to crispy perfection. Then just coat it with your favorite barbecue sauce mixed with some honey, and you have delicious baked honey barbecue chicken strips!
Ingredients:
2 cups cornflakes, crushed
2 boneless, skinless chicken breasts
2 eggs
2/3 cup buttermilk
Salt and pepper
1 cup barbecue sauce
¼ cup honey
Directions:
Step 1: Cut the chicken into strips. Place the chicken in a Ziplock bag or a covered container with the buttermilk and let it marinade for a few hours in the fridge.
Step 2: Preheat the oven to 400 degrees. Remove the chicken from the buttermilk. Sprinkle with salt and pepper.
Step 3: In a dish, beat the eggs and 3 tbsp. of the buttermilk (discard the rest of the buttermilk). In another dish, place the cornflake crumbs. Dip the chicken in the egg mixture, then coat with the cornflake crumbs (press them a bit to adhere to the chicken). Place on a greased baking sheet. Bake for 12-15 minutes, or until chicken is no longer pink in the center.
Step 4: In a saucepan over low heat, stir the barbecue sauce and the honey for a minute or two. Remove from heat and dip the chicken strips, one at a time, in the barbecue sauce to coat. Place the chicken back on the baking sheet and bake in the oven for another 5 minutes.
Step 3: Transfer to a serving plate and enjoy!
