This is a delicious variation to traditional roasted potatoes. Red potatoes are roasted with a honey mustard butter sauce infused with dill and garlic. Yum!
Ingredients:
1 ½ lbs. red potatoes
½ stick butter (¼ cup), melted
2 ½ tbsp. honey
1 ½ tbsp. Dijon mustard
1 ½ tbsp. chopped fresh dill
2 garlic cloves, minced
½ tsp. salt
½ tsp. pepper
Directions:
Step 1: Place the potatoes in a large pot of water and turn the heat to high. Once the water is boiling stir in some salt. Boil the potatoes for approximately 20 minutes, or until just tender when pierced with a fork (but not too soft). Remove from pot and rinse with cold water. Let potatoes cool.
Step 2: Preheat the oven to 425 degrees. Cut the potatoes into small chunks (probably into either fourths or sixths, depending on the size of the potatoes).
Step 3: Whisk the butter, honey, mustard, dill, garlic, salt, and pepper in a large bowl. Take about ¼ of the mixture out and reserve for later. Add the potatoes to the bowl and toss to combine. Pour the mixture onto a greased baking dish and bake for about 15 minutes (turning halfway through), or until the potatoes have browned and are tender.
Step 4: Transfer the potatoes to a serving dish and pour on the remaining sauce. Gently toss. Then dish it up!
Made these the other night and me and the missus really enjoyed them! Will definitely be making them again!
