Bacon, Egg, and Cheese Wrap with Spicy Mayo

Breakfast wraps are becoming more and more popular at restaurants, delis, and bagel stores, and I love that there are so many variations to them.  I decided to make a breakfast wrap at home, but I wanted to put a different twist on it, so I added some spice! Eggs are combined with bacon and pepper jack cheese and topped with Sriracha mayo, and all of this is wrapped up in a soft flour tortilla which is then grilled. It will definitely be a good morning with one of these!

Ingredients: (Makes 2 wraps)

6 slices of bacon
Cooking Spray
1 tbsp. butter
5 eggs
3 tbsp. whole milk
¼ tsp. garlic powder
Salt and pepper
½ cup shredded pepper jack cheese
2 tbsp. mayonnaise
2 tsp. Sriracha sauce
2 large burrito-size flour tortillas

Directions:

Step 1: Heat oven to 400 degrees.  Line a baking sheet with aluminum foil and spray the foil with cooking spray. Lay the bacon on the foil-lined pan and bake for approximately 20-25 minutes, or until the bacon is crisp.  Remove the pan from the oven and transfer the bacon to a paper towel-lined plate.

Step 2: Whisk the mayonnaise and the Sriracha together.  Set aside.

Step 3. Whisk together the eggs, milk, garlic powder, and a pinch of salt and pepper. Melt butter in a non-stick frying pan over medium heat and add the egg mixture.  Slowly stir the mixture until soft lumps begin to form, then turn the heat to low and begin to gently fold the eggs, rather than stirring.  Continue folding until there is no more liquid in the pan.  Remove from heat.  Crumble the bacon and fold into the eggs.

Step 4: Lay the flour tortillas on 2 plates. Spoon the egg mixture evenly in the center of the two tortillas, leaving space on either side of the tortilla.  Sprinkle the cheese evenly over the eggs, then top with the Sriracha mayo.

Step 5: Fold the sides of the shell in, then fold the top and the bottom in so everything is nicely tucked.

Clean the frying pan, then return to stove over medium heat and spray with cooking spray.  Place both of the closed wraps in the frying pan.  Once the bottom begins to lightly brown, flip the wraps over to brown the other side.  Once both sides are lightly brown, remove from heat.  Cut wraps in half and transfer to plate.  Enjoy!
