This is a great side dish but can also be served as a healthy appetizer. Cauliflower florets are coated with a seasoned Parmesan panko coating and baked until crispy and golden. Serve it up with some marinara and go to town!
Ingredients:
1 head of cauliflower, cut into florets
3 eggs
1/3 cup buttermilk
1 1/3 cups panko breadcrumbs
¾ cup parmesan cheese
½ tsp. garlic powder
¼ tsp. salt
¼ tsp. pepper
Marinara sauce for dipping
Directions:
Step 1: Preheat oven to 400 degrees.
Step 2: In a dish, whisk the buttermilk and eggs. In another dish, combine the panko bread crumbs, Parmesan cheese, garlic powder, salt, and pepper.
Step 3: Dip the cauliflower in the egg mixture, then coat in the panko mixture. Place on a greased baking sheet and bake for 25-30 minutes, or until lightly browned and tender.
Step 4: Serve with marinara sauce!
