Corn Dip

This corn dip would be perfect for any party or gathering. It is so incredibly delicious, I literally have to pry myself away from it every time I make it.  It’s creamy and cheesy with a slight crunch from the corn and veggies. You will be a rock star if you serve this to your guests. Trust me.

Directions:

3 cups corn
1 ½ cups shredded cheddar cheese
1 cup shredded pepper jack cheese
¼ cup diced red bell pepper
¼ cup diced red onion
¼ cup chopped scallions, plus some extra for sprinkling on top
1 clove garlic, minced
1 4-oz can diced green chiles, drained
1 jalapeno pepper, chopped
2/3 cup mayonnaise
1 cup sour cream
1 tsp. sugar

Directions:

Preheat oven to 375 degrees. Combine all ingredients in a bowl.  Transfer to a casserole dish and bake for 30-35 minutes. Remove and let rest for at least 10 minutes, then sprinkle with some scallions, take some tortilla chips, and dig in!
