These muffins are so moist and delicious, you will have a hard time eating just one! A cinnamon batter is combined with freshly chopped apples and then sprinkled with a brown sugar crumb topping and baked to create this fabulous addition to any breakfast. Cinnamon Apple Crumb Muffins…try em. 🙂
Makes about 18 muffins
Ingredients:
1/3 cup butter
3 tbsp. vegetable oil
2 eggs
1 cup granulated sugar
2 tsp. vanilla extract
2 tsp. baking powder
½ tsp. baking soda
1 ½ tsp. cinnamon
¼ tsp. salt
1 cup sour cream
2 cups all-purpose flour
2 apples, peeled and chopped
For the crumb topping:
½ cup flour
½ cup brown sugar
½ tsp. cinnamon
Pinch of salt
¼ cup butter, softened
Directions:
Step 1: Preheat oven to 350 degrees. Line cupcake pans with paper liners.
Step 2: Beat the butter, vegetable oil, eggs, vanilla, and granulated sugar with an electric mixer on medium speed for one minute. Beat in the sour cream. Add the flour, baking powder, baking soda, cinnamon, and salt and beat for an additional minute. Stir in the apples.
Step 3: Combine the topping ingredients in a medium size bowl. Beat with an electric mixer on low until combined. Finish by pressing the mixture together with your fingers to create larger crumbs.
Step 4: Spoon the batter into the cupcake liners to about 2/3 full. Top each cupcake with some crumbs (about a tablespoon or so). Bake for 25-30 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
Step 5: Let the cupcakes cool for about 5 minutes, then remove from the pan.
