After a great workout in the morning, there is nothing better than a delicious, healthy breakfast. This egg white scramble is full of flavor! Egg whites are combined with spinach, Monterey Jack cheese, and seasonings and scrambled together to create a perfect start to the day. Healthy does not have to be boring!
Serves 2
Ingredients:
6 egg whites
¼ tsp. garlic powder
¼ tsp. onion powder
¼ tsp. salt
Fresh cracked pepper
Cooking spray
1/3 cup frozen spinach, thawed and drained
¼ cup plus 1 tbsp. grated Monterey Jack cheese
Directions:
Step 1: Whisk the egg whites with the garlic powder, garlic powder, salt, and a bit of pepper.
Step 2: Squeeze the spinach with paper towels so it is completely dry. Stir the spinach in with the eggs.
Step 3: Heat a nonstick skillet to medium-low heat and spray with cooking spray. Pour the egg mixture into the skillet. Cook for a few minutes, stirring occasionally, then add ¼ cup of the cheese and gently combine it with the eggs. Once the eggs are no longer liquidy, sprinkle the remaining cheese on top of the eggs.
Step 4: Transfer to 2 plates and… breakfast is served!
