A great appetizer or side dish, these cauliflower bites are low-carb and absolutely delicious! The egg acts as a binder to marry all of the ingredients together, and the cheese, onion, and seasonings provide lots of amazing flavor. I like to serve mine with marinara sauce, but feel free to use whatever dipping sauce you like.
Ingredients:
2 cups cauliflower florets
1 egg
1 cup cheddar cheese
¼ cup grated onion
1 tsp. oregano
1 tsp. garlic powder
¾ tsp. salt
½ tsp. paprika
½ tsp. black pepper
Marinara sauce, for dipping
Directions:
Step 1: Preheat oven to 400 degrees. Bring a large pot of water to a boil and add a teaspoon of salt. Add the cauliflower and boil for about 5 minutes until the cauliflower just starts to get tender (but not too soft). Drain the cauliflower well and pat dry with paper towels.
Step 2: Once the cauliflower has cooled a bit, place it in a food processor and pulse a few times until the cauliflower is the size of rice. Pour into a fine mesh strainer and drain again, pressing dry with paper towels. Try to remove as much water as you can out of the cauliflower.
Step 3: Transfer the cauliflower to a large bowl and add the rest of the ingredients. Stir until fully combined. Spoon the mixture into greased mini-muffin tins. Bake for 12-15 minutes or until the edges are golden brown. Let cool for a few minutes, then remove from the pans.
Serve with marinara sauce or your favorite dipping sauce!
