Asian Fish Tacos

I love fish tacos, but I tend to always make a Tex-Mex version. I decided to try a variation  and put an Asian spin on it. Instead of the Mexican seasonings that I typically season the fish with, strips of cod are given a simple sprinkling of salt and pepper, pan-fried, then brushed with a homemade teriyaki sauce. The fish is placed on flour tortillas and then topped with a ginger slawl and garnished with scallions.

These tacos are super delicious!

Makes 6-8 tacos

Ingredients:

1 lb. cod, cut into strips
Salt and Pepper
2 tbsp. extra virgin olive oil
1/3 cup soy sauce
2 tbsp. brown sugar
¼ cup water, plus one teaspoon
1 clove garlic
3 tsp. ginger, divided
½ tsp. cornstarch
4 cups shredded Napa Cabbage
½ cup shredded carrots
Juice of two limes
1 tbsp. honey
6-8 small flour tortillas
3 tbsp. chopped scallions
1/4 cup slivered almonds, lightly toasted

Directions:

Step 1. Prepare the teriyaki sauce: Heat the soy sauce, brown, sugar, ¼ cup of water, garlic, and one teaspoon of ginger in a small saucepan over medium heat, stirring occasionally. Once the mixture starts to bubble, turn to low. Mix the teaspoon of water with the cornstarch and then whisk into the sauce. Return the mixture to medium and continue to stir and cook until the sauce has thickened. Remove from heat.

Step 2: Prepare the slaw: Whisk together the lime juice, honey, and one teaspoon of ginger. Combine with the cabbage and carrots. Set aside.

Step 3: Prepare the fish: Sprinkle some salt and pepper on the fish. Place a large skillet over medium heat, add the oil, and turn to coat the pan. Carefully place the cod strips in the pan and cook for about 2 minutes, then flip the cod and cook for another minute or until the cod is cooked through. Turn off the heat and pour the teriyaki sauce over the cod. Gently turn the cod to coat all sides with the sauce. 

Step 4: Assemble the tacos! Place a couple of strips of cod on each tortilla shell, then top them with some slaw and a teaspoon or two of slivered almonds and scallions.

Now dig in!
