Ice Cream Pie

This is a great recipe to use up that leftover Halloween candy. When chopped up and mixed with ice cream, it makes the perfect dessert! I happen to love Oreos, so I make an Oreo pie crust and use Oreos in and on top of the ice cream as well, but a graham cracker crust would be fine too! I’ve been known to add some peanut butter to the ice cream as well. This pie is really a blank canvas- make it your own!

Sometimes, when I get wild and crazy, I top each slice with some hot fudge and whipped cream. If you’re also feeling wild and crazy, go for it. Either way, you will love this dessert!
 
 

 

Ingredients:

 

1 package Oreos, divided

4 tbsps. butter, melted

1 carton (about a half gallon) vanilla ice cream (or whatever flavor you like)

Chopped up chocolate candy (Reeses, Butterfinger, Kit Kat, Heath…whatever you have)- Use as much or as little as you want!

Directions:

1. Place 23 Oreos in a food processor and process until fine crumbs are formed. Mix the crumbs with the melted butter and press on the bottom and up the sides of a pie plate. Place the pie plate in the freezer for one hour to firm up

2. Chop the remaining Oreos and set aside.

3. Spoon the ice cream into a large bowl and add the candy and some of the chopped Oreos. Using two spoons, work the candy and Oreos into the ice cream to combine.

 4. Spoon the ice cream mixture into the pie crust and carefully smooth out. Sprinkle the rest of the chopped Oreos on top (or extra chopped candy if you prefer) and press down a bit. Freeze until ready to serve.
