Buffalo Cauliflower

My favorite way to use cauliflower!  I believe life is all about balance. I love cheese, pasta, and anything with a cream sauce, but I also love veggies, chicken, and salads. This recipe is for those days when I am craving buffalo wings, but I know I should opt for something healthier. I have to say…these are a pretty good alternative. 🙂

This recipe is made with butter, but I have substituted light butter, and it is still really good! You can definitely use less butter, but the sauce will be spicier.  The butter balances out the heat of the hot sauce. But if you like a lot of heat, go for it. 🙂

Ingredients:

1 head of cauliflower, cut into florets
¾ cup flour
¾ cup water
1 tsp. cumin
½ tsp. garlic powder
½ tsp. paprika
½ tsp. salt
¼ tsp. pepper

6 tbsp. butter
2/3 cup hot sauce (I use Frank’s)
3 tbsp. honey
½ tsp. garlic powder
½ cup chopped celery
2 tbsp. blue cheese dressing

Directions:

Step 1: Preheat oven to 425 degrees.  Put parchment paper on a baking sheet and coat the parchment with cooking spray. Mix flour, water, cumin, ½ tsp. garlic powder, paprika, salt, and pepper in a bowl.  Dip cauliflower in mixture, shake off excess, and place on prepared pan.  Bake for 20 minutes, then take out and flip the cauliflower with a spatula.  Bake for another 20 minutes.

Step 2: Combine the butter, hot sauce, honey, celery, and garlic powder in a small saucepan over medium heat until butter is melted.  Turn off heat.  Let sit for 10 minutes.  Pour mixture into a blender or a small food processor and add blue cheese dressing. Blend until smooth.  Pour back into saucepan.

Step 3: Coat the cauliflower with the hot sauce mixture and place back on the baking sheet.  Bake for an additional 10 minutes, or until the coated cauliflower starts to brown slightly.
