Peanut Butter and Jelly French Toast

French toast meets a peanut butter and jelly sandwich…a match made in heaven!  I love anything peanut butter, and the fact that it gets warm and toasty inside the French toast and slightly sweet from the jelly makes it just luscious! This French toast recipe is so rich and delicious, there is no need for syrup!  Perfect for breakfast, lunch, dinner, or even dessert!

Ingredients:

4 slices of bread
3-4 tbsp. peanut butter
2-3 tbsp. jelly (your flavor of choice)
2 eggs
¼ cup milk
1 tbsp. sugar
1 tbsp. flour
1 tsp. vanilla
A pinch of cinnamon
1 tbsp. butter
Powdered sugar

Step 1: Assemble your peanut butter and jelly sandwiches.  Spread 1 ½ – 2 tablespoons of peanut butter on each of two slices of bread.  Spread 1 – 1 ½ tablespoons of jelly on each of the other two slices of bread.  Top the jelly slices with the peanut butter slices to create two sandwiches.

Step 2: Whisk the eggs, milk, sugar, flour, vanilla, and cinnamon in a shallow dish.  Coat all sides of each sandwich with the egg mixture.

Step 3: Melt the butter in a frying pan. Add the sandwiches and cook about 3-4 minutes per side or until lightly browned and slightly crisp.

Step 4: Dust with a little powdered sugar, cut into it, and watch that peanut butter goodness start to ooze out.  Pure deliciousness!
