One of my favorite things to make is chili. There are so many variations to it…it’s like a blank canvas that you can paint however you want. Since I love barbecue sauce, I decided to make a BBQ Chili. It has all of the usual suspects…ground beef, beans, onions, spices, but I added some barbecue sauce and some corn to give it a different twist. It’s hearty, healthy, comforting, and really good!
Ingredients:
1 lb. ground beef
1 large onion, chopped
1 red pepper, chopped
1 green pepper, chopped
1 jalapeno pepper, finely chopped (optional)
2 cloves garlic, minced
1 small can black beans
1 small can kidney beans
1 cup frozen corn
1 can light beer
1 28 oz. can crushed tomatoes
1 28 oz. can diced tomatoes
1 ¼ cup BBQ sauce
2 tbsp. tomato paste
1 tbsp. sugar
3 tbsp. chili powder
1 ½ tsp. cumin
1 ½ tsp. paprika
1 ½ tsp. salt
Optional Toppings: cheddar cheese, sour cream, scallions
Directions:
Brown the beef in a skillet over medium heat. Drain the beef and transfer to a slow cooker. Add the rest of the ingredients to the slow cooker, cover, and cook on low for 5 ½ -6 hours. Spoon into a bowl, throw some toppings on it if you feel the urge, and enjoy!
