Sauteed Brussel Sprouts with Bacon and Walnuts

If you think you don’t like Brussel sprouts, try this recipe!  The Brussel sprouts are finely chopped and sautéed, then combined with bacon for some delicious saltiness and toasted walnuts for crunch to create a fantastic side dish. I’ve already converted some non-believers.  Seriously…try it.

Ingredients:

1 lb. Brussel sprouts, trimmed
6 slices of bacon
1 tbsp. extra virgin olive oil
2 cloves garlic, minced
1/3 cup chopped walnuts
2 tbsp. pure maple syrup
Salt and cracked black pepper

Step 1:  Preheat the oven to 375 degrees.  Spread the walnuts on a baking sheet and bake until lightly toasted and fragrant, about 5-7 minutes.  Let cool.

Step 2:  Fry the bacon in a skillet over medium heat.  Fry until both sides of the bacon are nice and crisp.  Remove the bacon and set aside.  Discard all but 1 tablespoon of the bacon grease.  Wipe the skillet clean.

Step 3: Thinly slice the Brussel sprouts into fine ribbons.  Add the olive oil to the pan with the bacon grease. On medium heat add the Brussel sprouts and the garlic.  Cook, stirring until tender, about 5 minutes.

Step 4: Stir in the maple syrup, walnuts, and bacon and cook for another minute.

Step 4: Season with salt (1/4 tsp or to taste) and fresh cracked pepper.  Enjoy!
