I just love the flavors in this dish, and it is so easy to make! Salmon is marinated in a blend of soy sauce, brown sugar, ginger, and lots of other delicious ingredients, and then the salmon is baked right in the pan it was marinating in. The juices that are left in the pan after the salmon cooks becomes an amazing sauce to spoon over the salmon once it’s done. Yum!
Ingredients:
2 salmon fillets
2 tbsp. olive oil
2 tbsp. rice vinegar
2 tbsp. soy sauce
2 tbsp. brown sugar
2 cloves garlic, minced
2 tbsp. minced onion
1 tbsp. sesame oil
2 tsp. ginger, peeled and grated
1/8 tsp. crushed red pepper (optional)
Directions:
Step 1: Place the salmon in a baking dish. In a small bowl, whisk the remaining ingredients. Pour the mixture over the salmon. Cover the baking dish with plastic wrap or foil and place in the refrigerator for an hour or two.
Step 2: Preheat the oven to 350 degrees. Remove the foil and bake the salmon right in the pan with the marinade for approximately 15 minutes, or until the salmon can be flaked with a fork.
Step 3: Plate the salmon and spoon extra sauce over it.

I take it off before to allow the flavors to seep into all sides of the salmon, but no big deal if you didn’t. You can even leave the skin on if you want!
