This is probably my favorite dish to order when I go out for brunch. I will take any excuse to eat pizza for breakfast. This pizza is topped with eggs, bacon, cheese, onions, and peppers…I mean, what’s not to love? I use store-bought pizza dough to make it nice and easy in the morning, but feel free to make it from scratch. Either way, it is absolutely delicious!

Store-bought pizza dough (a can of Pillsbury pizza crust is a good option)
7 slices of bacon
¼ tsp. garlic powder
¼ tsp. onion powder
¼ tsp. salt
Fresh cracked pepper
1 tbsp. canola oil
¼ cup garlic and herb flavored cream cheese (I use Philadelphia brand)
2 cups shredded Monterey Jack cheese
½ of a small red bell pepper, cut into strips
½ of a small onion, halved and sliced thin
Fresh chopped parsley (optional)
Step 1: Preheat oven to 425 degrees. Heat a frying pan over medium heat. Chop the bacon (or cut with a kitchen scissor) and place the bacon in the skillet. Sauté until the bacon is crisp, then remove from the pan and place on a paper towel-lined plate. Discard all but one tablespoon of the bacon grease.
Step 2: Grease a pizza stone or baking sheet with the oil. Place the pizza dough on the baking sheet and shape into a large circle with a rolling pin (or your hands if it works). Bake for about 8-10 minutes, or until the crust just starts to get lightly browned. Remove from the oven.
Step 3: In the same frying pan that the bacon was in, heat the one tablespoon of bacon grease over medium heat. In a bowl, whisk the eggs, garlic powder, onion powder, salt, and some fresh cracked pepper. Pour the egg mixture into the frying pan. Slowly stir the eggs until soft lumps begin to form, then turn the heat to low and begin to gently fold the eggs, rather than stirring. Continue folding until there is no more liquid left in the pan. Remove from heat.
Step 4: Spread the cream cheese over the crust, then spread the eggs, shredded cheese, peppers, and onions over it. Bake for 10-13 minutes, or until the crust is golden and the cheese is melted.
Step 5: Garnish with chopped parsley, cut into slices, and dig in!
