Chicken Waldorf Lettuce Wraps

Waldorf Salad is a classic, and it happens to be one of my dad’s favorite salads (I remember a few Father’s Days where it made an appearance at the dinner table). This salad combines fresh fruit and nuts with lettuce in a creamy dressing…really, what’s not to love?

One day, not too long ago, I decided to make it and add some leftover roast chicken that I had in the fridge, and it was soooo good! So from there I thought- this would be perfect as a lettuce wrap. So the next day, I bought some butter lettuce and spooned the delicious mixture into lettuce cups. I ate it every night that week. Seriously, it was so yum.

Ingredients:

 

4 cups chopped, cooked chicken (You can also use leftover turkey!)
1 cup chopped celery
1 cup grapes, halved
1 apple, chopped
2 tbsp. chopped scallions
1 cup pecan halves
½ cup dried cranberries
1 cup mayonnaise
Juice of ½ lemon
1 tsp. Dijon mustard
Salt and pepper
Butter lettuce, Boston lettuce, Iceberg lettuce, or whatever lettuce you prefer for wraps

 

 

Directions:

1. Combine the chicken, celery, grapes, apple, scallions, pecans, and cranberries in a large bowl.   

2. In a small bowl, whisk together the mayonnaise, lemon juice, mustard, and a pinch of salt and pepper. Pour the dressing over the chicken mixture and toss everything together. 

3. Carefully separate, rinse, and thoroughly dry the lettuce leaves.  

4. Spoon the chicken salad onto each lettuce cup.
